## About this wine

2Naturkinder is a natural winemaking project led by Melanie Drese and Michael Völker in Franken, Germany. After working in academia across London and New York, the couple returned to Michael's family estate in 2013 to convert the vineyards to organic and biodynamic viticulture. The Bat Nat parcel, Kitzinger Eselsberg, is adjacent to a habitat supporting native bat species. The estate actively supports bat conservation by installing bat boxes, utilizing guano as compost fertilizer, and donating proceeds from bottle sales to wildlife preservation.

## Interesting facts

- Guano collected from bat boxes installed in the vineyard is used as organic fertilizer.
- A portion of sales from every bottle is donated to a local bat conservation organization.
- Winemakers Michael and Melanie abandoned academic careers in London and NY to return to winemaking.

## Food pairing

The vibrant acidity and delicate sparkle cut through rich charcuterie and creamy cheeses, while the earthy undertones of Pinot Meunier complement savory tarts and roasted poultry.

## Wine making process

Made from 100% Pinot Meunier (Schwarzriesling) grown on shell limestone soils. Grapes are direct-pressed gently to extract a light coppery orange hue. Spontaneous fermentation occurs with indigenous yeasts without temperature control. The must is bottled under crown cap while fermentation continues naturally inside the bottle as a Pétillant Naturel. Aged on full lees through winter and hand-disgorged without fining, filtration, or added sulfites.
