## About this wine

Domaine Didier Chaffardon is a boutique natural estate located in the Anjou region of the Loire Valley. Originally from Savoie, winemaker Didier Chaffardon established his estate in 2006, limiting his total vineyard holdings to just three hectares so he could work entirely alone. He practices organic and biodynamic viticulture on small parcels planted on schist and dark clay soils around Saint-Jean-des-Mauvrets. The whimsical cuvée name '7 et 6 et Trange' is a phonetic play on the French phrase 'C'est si étrange' ('It's so strange').

## Interesting facts

- The cuvée name '7 et 6 et Trange' is a French phonetic wordplay on 'C'est si étrange', meaning 'It's so strange'.
- Winemaker Didier Chaffardon famously plays classical J.S. Bach music to his fermenting and aging barrels in the cellar.
- Chaffardon deliberately caps his vineyard size at just 3 hectares so he can perform all vineyard tasks completely by hand.

## Food pairing

The crunchy red fruit, vibrant natural acidity, and firm tannins of Cabernet Franc and Grolleau contrast beautifully with savory poultry, charcuterie, and pork. High natural acidity cuts through rich textures and earthy mushrooms while standing up to tangy goat cheese without overpowering the dish.

## Wine making process

Crafted with a strict low-intervention philosophy, this red wine undergoes 100% whole-cluster spontaneous fermentation using indigenous wild yeasts in neutral tanks. Vinification is completed with zero chaptalization, zero fining, zero filtration, and no added sulfites. The wine is aged in a combination of neutral fiberglass tanks, neutral oak casks, and glass demijohns to retain its lively, unadulterated fruit character and regional schist terroir.
