## About this wine

Adega Damm was established in 2017 by Martin Damm, a former Danish therapist and wine importer who fell in love with the dramatic landscapes of Ribeira Sacra. Located in Cazoga within the Amandi subzone of Galicia, Spain, the estate focuses on small-batch production from ancient terraced vineyards perched high above the Sil and Miño rivers. The steep granitic and slate slopes require painstaking hand labor, reflecting the region's historic tradition of heroic viticulture.

## Interesting facts

- Founded by former Danish therapist Martin Damm after falling in love with Galicia's dramatic river valleys.
- Vines are grown on terraced slopes with gradients up to 90 degrees, requiring extreme 'heroic viticulture'.
- Aged in seasoned French oak barrels sourced directly from top Burgundian producers.

## Food pairing

The lively Atlantic acidity, fine-grained tannins, and vibrant red fruit profile of this Mencía make it an exceptional match for savory cured meats, roast poultry, and earthy mushroom dishes. The fresh acidity cuts through fat while the delicate tannin structure won't overpower nuanced flavors.

## Wine making process

Grapes from 40- to 130-year-old vines are harvested by hand on steep terraced slopes. The fruit undergoes a 5-day cold soak in stainless steel prior to spontaneous fermentation with indigenous yeasts, incorporating partial whole clusters and gentle manual pigeage. The wine is aged for approximately 11 months in seasoned 228L and 350L French oak barrels previously used by premier Burgundian estates, then bottled unclarified and unfiltered with minimal added sulfur.
