## About this wine

AdegaMãe was founded by the Alves family, creators of the Riberalves Group, as a tribute to the family matriarch, with 'Mãe' translating to 'Mother'. Situated near Torres Vedras in the Lisboa wine region, the estate features modern architecture and focuses on producing 'Atlantic Wines' influenced by the nearby ocean. Located roughly 10 kilometers from the Atlantic coast, the vineyards benefit from cool sea breezes that define this distinct Portuguese expression of Sauvignon Blanc.

## Interesting facts

- Founded by the family behind Riberalves, one of Portugal's major codfish producers.
- The winery name 'Mãe' means 'Mother', created in tribute to the family matriarch.
- Vineyards sit just 10 kilometers from the Atlantic Ocean on limestone clay soils.

## Food pairing

The high Atlantic acidity and crisp mineral tone of this wine make it a superior partner for raw and grilled seafood, as well as high-acid cheeses like goat cheese. Its vibrant herbal and citrus character effortlessly complements aromatic greens, light seafood dishes, and mild Asian spices.

## Wine making process

Harvested from calcareous clay soils, grapes undergo total destemming and six hours of cold skin maceration before gentle pressing. Fermentation takes place in temperature-controlled stainless steel vats at 15–16°C for 15 days. The wine ages in stainless steel tanks on fine lees with weekly batonnage for six months prior to bottling, with zero oak contact.
