## About this wine

Domaine Mosse was established in 1999 by Agnès and René Mosse in Saint-Lambert-du-Lattay after operating a natural wine bar in Tours. Inspired by iconic Loire vignerons, they built a benchmark estate in the Anjou area. Today, the 15-hectare organic estate is managed by their sons, Joseph and Sylvestre Mosse. Intentionally declassified from AOC Anjou to Vin de France (VDF) to retain complete winemaking freedom, this cuvée comes from young selection massale vines grown in the schist and clay soils of 'Anjou Noir'.

## Interesting facts

- Founders Agnès and René Mosse ran a natural wine bar in Tours before leaving to make their own wine.
- It is intentionally labeled Vin de France to preserve complete creative freedom in harvest and winemaking.
- Grown in 'Anjou Noir' on ancient dark schist and clay soils in the Layon area.

## Food pairing

The vibrant acidity and chalky minerality of young Chenin Blanc effortlessly cut through rich textures like soft goat cheese, buttery sauces, or pastry crusts. Meanwhile, citrus and orchard fruit tones complement fresh shellfish, poached river fish, and roasted poultry.

## Wine making process

Grapes are hand-harvested with strict sorting in the vineyard. Whole clusters undergo a slow pneumatic pressing followed by spontaneous fermentation using native yeasts in stainless steel vats and neutral oak containers. Complete spontaneous malolactic fermentation occurs naturally. The wine is aged on its fine lees for 6 to 12 months in vats, neutral barrels, and wooden foudres. It is bottled unfined and unfiltered with a minimal dose of sulfur dioxide.
