## About this wine

The debut of Agrapart Avize Atoma P22 represents an exciting new chapter in modern Champagne. Following the 2020 division of the historic Agrapart & Fils estate, winemaker Fabrice Agrapart established Agrapart Avize to pursue an independent vision. Operating from the heart of the Grand Cru village of Avize, Fabrice implements a philosophy focused on natural rhythms and the passage of time. The name 'Atoma' (meaning atom) represents the liquid DNA of this new project. Because the perpetual reserve was started at the estate's inception in 2020, every future bottling of Atoma will contain a tiny portion—an atom—of every single vintage produced by the winery, creating an unbroken thread of history.

## Interesting facts

- Following the 2020 split of the historic Agrapart & Fils estate, winemaker Fabrice Agrapart launched this independent project, Agrapart Avize.
- The name 'Atoma' (atom) means every future release will contain a tiny portion—an atom—of every vintage since the estate's 2020 inception.
- The perpetual reserve is aged in large 20-hectoliter oak foudres crafted from wood sourced from the Montagne de Reims.

## Food pairing

The high acidity and saline minerality of this Blanc de Blancs cut through rich, creamy textures, while its vinous weight and subtle oak maturation complement roasted poultry and earthy mushrooms. The zero-dosage dry profile requires savory, umami-rich, or delicately sweet seafood dishes to avoid clashing.

## Wine making process

This cuvée is crafted from 100% Grand Cru Chardonnay sourced across the Côte des Blancs. The blend consists of 50% base wine from the 2022 harvest, fermented with indigenous yeasts in 10-hectoliter vats, and 50% reserve wine from a perpetual reserve started in 2020. The reserve wine is aged in 20-hectoliter oak foudres made from Montagne de Reims wood. The wine undergoes 100% malolactic fermentation and is bottled without fining, filtration, or cold stabilization. Following tirage in July 2023, it aged on its lees for 16 months before disgorgement in November 2024 with zero dosage (Brut Nature).
