## Wine making process

The Agricola Grifalco Daginestra Aglianico del Vulture is produced using 100% Aglianico grapes. Following harvest, the grapes undergo extended maceration for approximately 60 days at controlled low temperatures in large Slavonian oak vats, utilizing indigenous yeasts. The wine is then aged for 24 months in 50hl Slavonian oak barrels, followed by a further 12 months of bottle aging before release. The winery employs certified organic farming practices.
