## About this wine

Domaine Einhart is a family estate rooted in Rosenwiller, Alsace, since the 1820s across seven generations. Nicolas Einhart converted the vineyards to organic farming in 2003, and his son Théo has expanded the farm into full biodynamic viticulture. The Albermohn Blanc originates from a specific parcel named Albermohn, characterized by shallow loamy-clay soils resting directly over active shell limestone (Muschelkalk), restricting vine roots to the upper layer. Co-harvesting and co-fermenting Riesling and Gewürztraminer allows the estate to create a harmonious expression of the terroir.

## Interesting facts

- The vines grow on Muschelkalk (shell limestone), restricting roots to the top 40 cm due to high calcium carbonate.
- Riesling and Gewürztraminer are co-harvested and co-fermented together rather than blended after fermentation.
- Aged for 11 months in ovoid sandstone vats, which allow micro-oxygenation without oak flavor impact.

## Food pairing

The vibrant acidity of Riesling cuts through richness, while Gewürztraminer's aromatic lift harmonizes beautifully with delicate spices, goat cheese, and roasted poultry. The wine's saline mineral finish complements seafood and light game dishes without overpowering them.

## Wine making process

Riesling and Gewürztraminer grapes are co-harvested by hand and undergo a cold 24-hour pre-fermentation maceration on skins to gently extract flavor precursors. Fermentation occurs spontaneously using 100% indigenous yeasts. The wine matures on total lees for 11 months in ovoid sandstone vats (sandstone eggs), which provide delicate micro-oxygenation while maintaining total varietal purity. The wine is bottled without fining, filtration, or added sulfites.
