## About this wine

Domaine Einhart is a family-run estate located in Rosenwiller in northern Alsace. Nicolas Einhart took over the domain in 1990 and converted fully to organic farming in 2008, working today alongside his son Théo. The name 'Albermohn Rouge' (or Demi-Lune) translates to 'Half Moon', referencing a specific micro-parcel planted on shallow Muschelkalk shell limestone soil with 35-year-old vines.

## Interesting facts

- The vines grow on shallow Muschelkalk shell limestone where active calcium carbonate restricts roots to 40cm depth.
- Albermohn translates to 'Half Moon', named after the unique shape of the estate's vineyard micro-parcel.
- Aged using a combination of neutral oak barrels and century-old 2,400-liter wooden foudres.

## Food pairing

The lively acidity and fine tannic structure of Pinot Noir cut through rich fats in duck and lamb, while its red fruit and subtle peppery spice notes complement savory mushroom dishes and classic Alsatian fare seamlessly.

## Wine making process

Hand-harvested 100% Pinot Noir grapes are fully destemmed and undergo 12 days of skin maceration with gentle extraction. Fermentation occurs spontaneously using indigenous yeasts. The wine ages for 11–12 months on fine lees, split between neutral oak barrels (40%) and century-old 2,400L wooden foudres (60%). Bottled unfined, unfiltered, and with zero added sulfur.
