## About this wine

Azienda Agricola Alessandro Viola is located in Alcamo, Northwest Sicily, spanning around 12 to 20 hectares of organically farmed land. Founded by Alessandro Viola, who holds degrees in viticulture and oenology, the estate operates on a philosophy of strict non-intervention, relying on nature to deliver balanced wines. Note di Bianco is crafted from Grillo vines planted in clay and limestone soils at an altitude of approximately 250 meters.

## Interesting facts

- Alessandro Viola operates on a philosophy that nature creates a perfect chemical balance that humans cannot improve upon.
- Unlike many Sicilian Grillos made in late-harvest or oxidative orange styles, this wine is picked early and raised in stainless steel.
- Winter cover crops of fava beans and clover are grown between rows to naturally fix nitrogen and nourish the soil naturally.

## Food pairing

The high, electric acidity and distinct saline core of this dry white wine slice through rich, sweet shellfish and oily fish while complementing citrus dressings. Fresh seafood extracts the vibrant Mediterranean herbal tones and citrus energy of early-harvested Grillo without overpowering its medium body.

## Wine making process

The Grillo grapes are organically harvested by hand early in September to maintain high natural acidity. In the cellar, whole clusters undergo direct pressing without extended skin contact. Fermentation occurs spontaneously using indigenous yeasts in temperature-controlled stainless steel tanks without added sulfur. The wine matures for around six months in stainless steel with light lees stirring before being bottled unfined and unfiltered with a minimal addition of sulfur dioxide.
