## About this wine

Domaine Einhart is a 7th-generation family estate located in Rosenwiller in northern Alsace. Nicolas Einhart converted the estate to organic agriculture in 2008, and in 2020 his son Théo joined after studying vinification in Burgundy, bringing a focused vision on low-intervention natural winemaking. Grown on hilltop Muschelkalk shell limestone soils, this cuvée represents a modern interpretation of the historic Alsatian field blend.

## Food pairing

The bright acidity and limestone salinity of this natural blend lift fresh seafood and balance rich Alsatian specialty dishes. The delicate floral notes from Muscat and Auxerrois harmonize with fresh goat cheese, lighter green vegetables, and simple shellfish without masking delicate flavours.

## Wine making process

Grapes are hand-harvested early in the morning in 20 kg crates. The fruit undergoes 24–30 hours of pre-fermentation cold maceration at 12–14°C. Stems are partially retained during pressing to naturally drain and aerate the juice. Fermentation occurs spontaneously using indigenous yeasts at controlled temperatures around 19°C without additives. Each grape variety is vinified separately before blending, followed by 8 months of aging on fine lees in stainless steel tanks. Unfined, unfiltered, and bottled with no added sulfites.
