## About this wine

Domaine YoYo was founded by Laurence Manya Krief, who left a decade-long career in Paris's fashion industry to make natural wines in Roussillon starting in 2005. She works steep, terraced vineyards using traditional horse-and-plough methods and shares a winery in Montesquieu-des-Albères with partner Jean-François Nicq. The Alta Blanc cuvée represents cross-border Mediterranean synergy, created by planting Catalan vine cuttings into southern French terroirs in the Albères foothills.

## Interesting facts

- Founder Laurence Krief worked for ten years in Paris fashion before founding her winery in 2005.
- Carignan Blanc vine cuttings were sourced from Cosmic Vinyaters in Catalonia to preserve high acidity.
- The estate's steep terraced vineyards are plowed using traditional horse-drawn equipment.

## Food pairing

The bright acidity and refreshing mineral edge cut through oily seafood and fresh cheeses, while subtle herbal nuances harmonise naturally with Mediterranean green herbs and summer vegetables.

## Wine making process

Organically grown in granite and sandy soils, the grapes are hand-harvested and undergo gentle direct pressing. Fermentation occurs spontaneously with wild indigenous yeasts without chemical inputs. The wine is aged in neutral stainless steel, fiberglass, or old wooden vessels to preserve freshness and fruit purity before being bottled unfiltered with minimal added sulfur.
