## About this wine

GraWü is an artisanal natural winery founded by husband-and-wife duo Leila Grasselli and Dominic Würth, located in Cermes in South Tyrol, Italy. Their name combines their surnames, reflecting a shared passion developed while working across iconic wine regions in France and Italy. The 'Ambra' cuvée is crafted from 100% Souvignier Gris, a resilient PIWI (fungus-resistant) grape variety cultivated organically on terraced, granite alpine soils in Naturno, Val Venosta. Produced in limited quantities, this skin-contact expression highlights high-altitude viticulture without synthetic chemical intervention.

## Interesting facts

- The winery name GraWü blends the last names of founders Leila Grasselli and Dominic Würth.
- Made from Souvignier Gris, a fungus-resistant PIWI variety created in Germany in 1983.
- Undergoes an extensive 7-month skin maceration in oak barrels before bottling without filtration.

## Food pairing

The structure and delicate tannic grip gained from 7 months of skin contact, combined with vibrant alpine acidity, allow this natural skin-contact wine to bridge the gap between white and red wine pairings. Richer proteins like duck or pork, savory mushroom dishes, and washed-rind cheeses pair harmoniously with the wine's textured body and savory finish.

## Wine making process

Harvested by hand, the Souvignier Gris grapes undergo spontaneous fermentation driven entirely by ambient wild yeasts in open wooden casks. The defining feature of this wine is an extended seven-month skin maceration period in used oak barrels, granting structure and coppery visual intensity. Following maceration, the wine matures for an additional five months in stainless steel tanks prior to bottling. The wine is bottled without fining, filtration, or artificial additives, with only minimal sulfur added.
