## About this wine

Acquired by Nicoletta Bocca in 1992, the San Fereolo estate is located in Dogliani, Piedmont. Sourced from 50-year-old vines in the high-altitude Austri parcel, this wine reflects traditional Piedmontese craft and deep respect for terroir. Unlike typical Barberas meant for early consumption, this cuvée is aged extensively before release to showcase the singular ageability and depth of old-vine Dogliani fruit.

## Interesting facts

- San Fereolo holds its Austri cuvée for roughly seven years before commercial release.
- A small 5% addition of Nebbiolo provides enhanced structural longevity and tannic grip.
- Winemaker Nicoletta Bocca studied under legendary Piedmont masters including Bartolo Mascarello.

## Food pairing

The vibrant acidity cuts through rich fats in braised meats and game, while the fine Nebbiolo tannins pair seamlessly with savory proteins and earthy wild mushrooms.

## Wine making process

Farmed using certified organic and biodynamic practices, the grapes are hand-harvested from high-elevation limestone clay soils. Fermentation occurs spontaneously with wild yeasts in large open oak vats, followed by 15 to 20 days of skin contact. The wine ages for 3 years in large neutral Slavonian oak botti and undergoes an additional 3 to 4 years of bottle maturation prior to commercial release without fining.
