## About this wine

Cellers de Can Suriol del Castell is centered around the historic Castell de Grabuac in Alt Penedès, where the Suriol family has farmed continuously since the early 1600s. The Azimut project was created by Assís Suriol to support neighboring local grape growers by purchasing certified organic fruit at fair prices. Meaning the line between the sun and the sea in Catalan and Arabic, Azimut reflects a holistic commitment to Mediterranean natural winemaking and community farming.

## Interesting facts

- The Suriol family has farmed the historic Castell de Grabuac estate continuously since the early 1600s.
- Azimut represents the line between the sun and sea, reflecting a partnership with local organic growers in Penedès.
- Bottled with zero added dosage and low added sulfur following natural underground concrete tank aging.

## Food pairing

High natural acidity and energetic bubbles scrub the palate clean when paired with rich cured meats, fresh seafood, and salty cheeses. The bone-dry, zero-dosage style harmonizes best with savory, mineral, or brine-accented dishes.

## Wine making process

Crafted via the Traditional Method, this Cava undergoes spontaneous primary fermentation using indigenous yeasts in stainless steel and historic underground concrete tanks. Malolactic fermentation occurs naturally in concrete over winter. After secondary fermentation in bottle, the wine ages on its lees for 9 to 10 months. It is disgorged on order without fining, filtration, or added sugar dosage, maintaining low added sulfur levels under 30 ppm.
