## About this wine

The Elvio Cogno Barbaresco Bordini 2020 is a 100% Nebbiolo wine from the Barbaresco DOCG appellation in Piedmont, Italy. It originates from the Bordini MGA vineyard in the commune of Neive, a 2-hectare site with southern exposure at 250 meters elevation. The estate was founded by Elvio Cogno and is now managed by Nadia Cogno and Valter Fissore, continuing a tradition of quality winemaking. The 2020 vintage benefited from favorable warm weather, contributing to the wine's complexity and aromatic profile. The wine is bottled unfiltered.

- Vineyard has a southern exposure for optimal sun.
- Wine is bottled unfiltered.

## Food pairing

The wine's firm tannins and medium-plus body are well-suited to complement the protein and fat in richer meat dishes, preventing the wine from being overpowered. Its acidity helps to cut through richness, while potential subtle earthy or savory notes can harmonize with ingredients like mushrooms and herbs.

## Wine making process

The Barbaresco Bordini 2020 is produced from 100% Nebbiolo grapes. Fermentation occurs in stainless steel with temperature control and automatic pump-overs, followed by a 20-day submerged cap maceration. Malolactic fermentation is completed in steel. The wine is aged for 12-14 months in large, used Slavonian oak barrels and then for 6 months in bottle. It is bottled without filtration.
