## About this wine

The Aurelio Settimo Barolo 2015 is a 100% Nebbiolo wine from the Barolo DOCG appellation in Piedmont, Italy. The winery, Azienda Vitivinicola Aurelio Settimo, is a family-run estate located in the hamlet of Frazione Annunziata in La Morra. The Settimo family has a history of farming in the region dating back to the early 1940s, with a dedicated focus on viticulture beginning in the 1960s. The current management, led by Tiziana Settimo, upholds a traditional approach to winemaking. The estate cultivates just under 7 hectares of vineyards, with vines aged between 20 and 50 years. The 2015 vintage benefited from a classic growing season in Barolo, with favorable weather conditions leading to optimal grape ripeness. Approximately 60% of the winery's production is exported.

## Food pairing

The wine's robust tannins and acidity are well-suited to complement the richness and protein in red meats, cutting through fat and cleansing the palate. Earthy notes in the wine can harmonize with mushroom-based dishes, while its structure can stand up to complex flavors.

## Wine making process

The Aurelio Settimo Barolo 2015 is produced using 100% Nebbiolo grapes. Following harvest, the wine undergoes malolactic fermentation in concrete tanks. It is then aged for 24 months in large, used French oak barrels. A further six months of bottle aging occurs before the wine is released. The alcohol by volume for this vintage is reported to be between 13.50% and 14.5%.
