## About this wine

Barolo DOCG Castelletto Persiera from Josetta Saffirio is a 100% Nebbiolo wine from the Monforte d'Alba region of Piedmont. The vineyard, named 'Persiera' for its historical peach trees, is situated on the Castelletto hill at elevations between 320 and 400 meters. The vines, planted post-World War II, grow on Helvetian-stage soil with a high sand content and alkaline pH. The Saffirio family has a long-standing winemaking tradition, with Josetta Saffirio continuing the legacy with her daughter Sara Vezza, emphasizing harmonious viticulture.

## Interesting facts

- Vineyard planted by Josetta Saffirio's grandfather after WWII.
- 'Persiera' means 'peach orchard' in Italian.
- Vineyard sits on steep slopes (50-52%) with southeast exposure.
- Soil is rich in mineral salts and active lime.

## Food pairing

The wine's full body and integrated tannins are well-suited to rich, protein-heavy dishes, where they can soften and complement the meat's texture. The wine's inherent structure can stand up to robust flavors, while its potential for savory notes can harmonize with herbs and earthy ingredients.

## Wine making process

The winemaking process for Barolo Castelletto Persiera involves soft pressing of hand-picked Nebbiolo grapes, followed by fermentation at controlled temperatures for 7-9 days. Malolactic fermentation is then carried out. The wine is aged for 24 months in new and second-passage wooden barrels, then spends 6 months in concrete tanks. It undergoes a final 6 months of bottle refinement before release. The winery's approach is guided by 'Viticolturarmoniosa'.
