## About this wine

Figli Luigi Oddero is a historic estate situated in La Morra in the Piedmont region. Following the reorganization of the original family property, Luigi Oddero launched his winery dedicated to traditional Nebbiolo craft and certified organic viticulture. The Convento bottling takes its name from the estate's central building, which originally operated as a monastery in the early 17th century.

## Interesting facts

- The name Convento honors the estate's winery structure, which was a working monastery during the 17th century.
- Aged exclusively in large Slavonian oak casks with zero barrique usage to maintain pristine Nebbiolo aromatics.
- The vines are rooted in Tortonian marl, clay, and sand soils on the sun-exposed slopes of La Morra.

## Food pairing

High tannins and vibrant acidity in traditional Barolo demand rich fats, protein, and savory umami compounds. Rich meats and aged hard cheeses soften the firm tannic structure, while earthy ingredients such as truffles and wild mushrooms complement the complex floral and herbal character of Nebbiolo.

## Wine making process

Organically farmed Nebbiolo grapes are hand-harvested from high-altitude slopes in La Morra. Vinification takes place with spontaneous fermentation using native yeasts in stainless steel and concrete tanks, accompanied by a 25-day skin maceration. The wine undergoes 24 months of aging in traditional large Slavonian oak casks, followed by a minimum of 12 months in the bottle before release.
