## About this wine

Mauro Veglio Barolo Paiagallo 2019 is a single-vineyard Barolo DOCG from Piedmont, crafted from 100% Nebbiolo grapes grown in the Paiagallo Menzione Geografica Aggiuntiva (MGA). The vineyard, situated on the eastern side of the Barolo commune, features marly sandy soils and a southeast-easterly exposure. The vines, planted in the mid-1980s, are managed using organic and sustainable farming practices. The Mauro Veglio estate is a family-run winery with a long history, now managed by Mauro and his grandson Alessandro, focusing on producing high-quality, niche wines. The 2019 vintage is noted for its structure and aromatic intensity, a result of a long vegetative cycle.

## Food pairing

## Wine making process

The winemaking process for Mauro Veglio Barolo Paiagallo 2019 begins with a 20-25 day maceration on skins in temperature-controlled stainless steel tanks, including an initial cold soak and gentle pump-overs for soft extraction. Malolactic fermentation occurs in stainless steel. The wine then ages for 24 months in a large 30-hectoliter oak barrel. Finally, it is decanted into stainless steel and bottled without filtration or clarification. The producer employs organic and sustainable farming practices, including the avoidance of pesticides and chemicals.
