## About this wine

Cascina Disa is a historic 15th-century estate situated in the Perno hamlet of Monforte d'Alba, stewarded by Elio Sandri and his family. Sandri practices non-interventionist farming and ultra-traditional winemaking focused on historical Nebbiolo clones. The micro-parcel Vigna Ceretta di Perno sits on steep, blue-marl limestone slopes that yield structured, highly age-worthy wines. The 2020 vintage captures remarkable balance between perfume, tension, and traditional Barolo architecture.

## Interesting facts

- Cascina Disa is a historic 15th-century estate located in the Perno hamlet of Monforte d'Alba.
- Elio Sandri practices high-density planting with narrow 0.7-meter vine spacing.
- The single vineyard Vigna Ceretta di Perno covers a tiny 0.44-hectare plot on blue marl soil.

## Food pairing

High natural acidity and robust, structural tannins require foods rich in protein, animal fats, or earthy umami flavors. Rich slow-cooked meats and aged hard cheeses soften the tannic frame, while white truffles and earthy mushrooms mirror Nebbiolo's complex tertiary profile. High heat from spices should be avoided as it accentuates high alcohol and firm tannins.

## Wine making process

Harvested manually from 40-year-old vines, the grapes undergo spontaneous fermentation with indigenous yeasts in traditional cement tanks alongside extended skin maceration. Aging takes place slowly over 3 to 4 years in large neutral Slavonian oak botti, followed by additional refinement in cement vats and bottle prior to release as a Riserva. The wine is bottled without fining or filtration and with minimal added sulfur.
