## Wine making process

The grapes for Barolo Rocche dell’Annunziata Mario Gagliasso 2020 are grown using the Guyot method and undergo hand-harvesting with selection. Maceration lasts for approximately three weeks at 27°C, followed by fermentation with natural yeasts in stainless steel tanks at around 30°C for 30-35 days. A post-fermentative maceration of 12-15 days brings the total skin-juice contact to about four weeks. Malolactic fermentation occurs spontaneously in stainless steel. The wine is then aged for 18 months in large Slavonian oak barrels.
