- The 2021 vintage in Piedmont is highly acclaimed by critics for its exceptional balance, structure, and long-term aging potential.

## Food pairing

Barolo's high acidity and formidable tannins require rich, savory dishes with ample fat and protein to bind the tannins and soften the palate. Earthy flavors like mushrooms and truffles mirror the wine's complex primary and developing tertiary notes, while slow-cooked meats complement its robust structure.

## Wine making process

The Nebbiolo grapes are carefully harvested and destemmed before undergoing temperature-controlled fermentation in stainless steel tanks. Extended maceration on the skins for several weeks allows for the extraction of color, complex aromatics, and the variety's signature firm tannins. Following fermentation, the wine is aged in accordance with DOCG regulations for a minimum of 38 months, including at least 18 months in traditional large oak casks (botti). This slow maturation softens the formidable tannins while preserving the bright red fruit and floral characteristics of the grape.
