## About this wine

Baron Amarillo is a specially selected Albariño crafted by Bodegas Pazo Cilleiro, an estate winery located in the heart of the Val do Salnés sub-zone of Rías Baixas, Galicia. Owned by the prominent Muriel Wines group, the winery is dedicated to producing vibrant, high-quality white wines that reflect the unique maritime influence of the Atlantic Ocean. The vineyards are situated on soft undulating hills near the historic Romanesque Monastery of Armenteira, where mature vines thrive in granitic soils.

## Interesting facts

- Sourced from Val do Salnés, the oldest, coolest, and most coastal sub-zone of the Rías Baixas appellation.
- Vines are trained on high overhead pergolas to lift the canopy off the damp ground, preventing rot in the wet maritime climate.
- The granitic, quartz-rich soils of the region impart a distinct mineral tension and subtle ocean-like salinity to the wine.

## Food pairing

The high, mouthwatering acidity and subtle saline minerality of this Albariño make it an exceptional partner for seafood. It effortlessly cuts through the natural richness of shellfish and oily fish, while its clean, citrus-driven profile complements light, herb-infused dishes without overpowering them.

## Wine making process

The winemaking process focuses on preserving the vibrant primary fruit and crisp Atlantic acidity of the Albariño grape. Grapes are harvested from mature vines averaging 20 to 25 years old, which are trained on traditional pergolas and trellises to maximize air circulation in the damp Galician climate. Following a careful selection, the juice undergoes temperature-controlled fermentation in stainless steel tanks. The wine is kept on its fine lees for a short period to add subtle texture and roundness before stabilization and bottling.
