## Wine making process

The winemaking process for Baron Ugo begins with spontaneous fermentation in vitrified cement tanks, utilizing natural yeasts without temperature control or added bacteria. Maceration on the skins lasts for 30 to 45 days. Following fermentation, the wine is aged for 36 months in large format oak vats (30 Hl) made of Allier and Slavonic oak, and also in large oval Austrian or French oak barrels. It then spends an additional month in cement tanks before being bottled and aged for 5-6 months. The grapes are carefully selected during harvest.
