## Interesting facts

- Barolo Riserva must undergo a minimum of 62 months of total aging prior to release, with at least 18 months in wooden barrels.
- Beni di Batasiolo was established when the Dogliani family purchased the historic Kiola winery in La Morra in 1978.
- The 2016 vintage in Barolo is acclaimed by critics as one of the greatest vintages of the 21st century.

## Food pairing

Barolo Riserva features strong tannins and vibrant acidity, making it ideal for rich, fatty meats and earthy dishes. The fat and proteins in braised meats soften Nebbiolo's firm tannic structure, while savory white truffles and aged cheeses seamlessly match the wine's earthy complexity.

## Wine making process

Nebbiolo grapes are hand-selected from top vineyard plots in the Barolo zone. Fermentation takes place in stainless steel tanks with extended maceration on the skins to extract structure and aromatic complexity. Malolactic fermentation occurs naturally. In accordance with Barolo Riserva regulations, the wine undergoes a minimum total aging process of 62 months, including extensive maturation in large Slavonian oak casks, followed by prolonged refinement in bottle before commercial release.
