## Wine making process

The Belle Naturelle Grüner Veltliner is produced using organic and biodynamic viticulture. Grapes are hand-harvested and undergo spontaneous fermentation on skins for approximately two weeks in neutral Austrian oak vats. A further ten days of maceration on skins occurs in open-top red wine fermenters, with fermentation utilizing a combination of berries and without temperature control. Malolactic fermentation is spontaneous. The wine is then aged on its lees in neutral oak barrels (500-1000 liters) in a historic cellar. It is bottled unfiltered and unfined.
