## About this wine

Le Coste di Gradoli was established in 2004 by Gianmarco Antonuzi and Clémentine Bouveron near Lake Bolsena in northern Lazio. The estate embraces holistic biodynamic farming, surrounded by wild woods and olive groves. Focusing on native varieties like Procanico and Malvasia grown on mineral-rich volcanic soils, Le Coste produces highly expressive and uncompromising natural wines.

## Interesting facts

- Founded by a former Roman lawyer and a French agronomist who met while making wine in Alsace.
- Vineyards are planted at a high density of over 10,000 vines per hectare on iron-rich volcanic soils.
- Aged in ancient 400-year-old cellars using wooden barrels crafted from oak, cherry, and walnut.

## Food pairing

The subtle textural grip from skin contact combined with electric volcanic acidity allows this white wine to handle rich, oily fish, roasted meats, herbs, and aged cheeses effortlessly.

## Wine making process

Hand-harvested grapes undergo spontaneous fermentation with wild yeasts in open wooden casks without temperature control. Skin contact maceration lasts between 2 to 14 days depending on vintage conditions. The wine ages for 12 to 24 months in old oak, cherry, and walnut casks in a 400-year-old subterranean cellar. Bottled unfined, unfiltered, and with zero added sulfur dioxide.
