## About this wine

Azienda Agricola Casaretti was established in 1911 in Calmasino, near Bardolino on the eastern shore of Lake Garda in Veneto, Italy. Today managed by brothers Giammaria and Stefano Rossi, the family estate operates under certified organic principles with low-intervention viticulture. Named 'Biancosale' (meaning 'White Salt'), this cuvée is an innovative blend crafted to capture the distinctive saline minerality and microclimate of the ancient glacial morainic soils near Lake Garda.

## Interesting facts

- The name Biancosale translates to White Salt, highlighting the distinct mineral sapidity from Lake Garda morainic soils.
- Casaretti is a certified organic family estate and an active member of FIVI (Italian Federation of Independent Winegrowers).
- The wine undergoes spontaneous fermentation using only indigenous yeasts in stainless steel.

## Food pairing

The vibrant acidity and fresh mineral sapidity of Biancosale slice cleanly through light fats while highlighting delicate flavors in freshwater fish, seafood pasta, and fresh soft cheeses.

## Wine making process

Grapes are harvested by hand from certified organic vineyards planted on morainic soils composed of clay, gravel, and mineral deposits. Spontaneous alcoholic fermentation occurs in temperature-controlled stainless steel tanks utilizing native yeasts. The wine ages for several months in stainless steel tanks to preserve varietal purity, crisp minerality, and fresh character, without any oak contact, followed by brief bottle resting prior to release.
