## About this wine

Fora was founded in 2020 in Nanto, Colli Berici, by sommelier Simone Fanton and Giovanni Bottazzi. The estate name 'Fora' stems from Venetian dialect meaning 'outside', reflecting both their commitment to outdoor vineyard life and their unconventional approach to winemaking. Managing just two hectares of 40-year-old vines rooted in limestone soils, Fora specializes in vibrant, natural wines made from indigenous grape varieties.

## Interesting facts

- The name 'Fora' is Venetian dialect for 'outside', nodding to open-air farming and thinking outside commercial conventions.
- Sourced from 40-year-old vines planted in pure calcareous limestone in Nanto.
- Uses fresh grape must instead of refined commercial sugar to initiate secondary fermentation in bottle.

## Food pairing

The bright acidity and delicate effervescence effortlessly cut through rich fats and fried batters, while the gentle red fruit and citrus notes complement creamy cheeses and cured meats without overpowering them.

## Wine making process

Produced using the ancestral method (Pét-Nat / Col Fondo), Tai Rosso grapes undergo two days of skin maceration before direct-pressed Garganega juice is co-fermented with indigenous yeasts in stainless steel tanks. The wine rests for seven months before being bottled with fresh Garganega must to initiate natural secondary fermentation. It is bottled unfined, unfiltered, and with minimal sulfur additions.
