## About this wine

Founded in 1952 by Joseph Zeltzer, Binyamina Winery is located in Israel's historic Binyamina region. Today owned by the Hetzi Hinam group, the winery sources fruit from top microclimates across Israel, including the Galilee. The Moshava range—named after Israel's traditional agricultural villages—is crafted to present fresh, modern, and accessible varietal expressions. Grown in the temperate Mediterranean climate of the Galilee, this Chardonnay benefits from dry weather conditions that allow pure fruit expression.

## Interesting facts

- The name 'Moshava' refers to the historic agricultural settlements established during early pioneer periods in Israel.
- Grapes are harvested at night to protect delicate varietal aromatics from daytime Mediterranean heat.
- Fermented and aged with zero oak contact to maintain pure green apple and citrus fruit flavors.
- Certified Kosher for Passover (Mevushal) and certified Vegan-friendly.

## Food pairing

With its crisp acidity, light body, and clean unoaked profile, this Chardonnay pairs wonderfully with lean seafood, poultry, fresh herbs, and light citrus or olive-oil sauces. High acidity in the wine cuts through mild richness like goat cheese while enhancing zest in citrus-dressed dishes.

## Wine making process

Harvested during the cool night hours to preserve delicate fruit aromatics and high natural acidity, the grapes are destemmed and softly crushed immediately upon arrival at the winery. Following static must clarification, fermentation occurs at low temperatures in 100% stainless steel tanks without oak contact. The wine is aged entirely in temperature-controlled stainless steel, undergoing rackings and stabilization before bottling to ensure a clean, unweighted style.
