## About this wine

Domaine Mosse was established in 1999 in Saint-Lambert-du-Lattay in the Anjou region of the Loire Valley by Agnès and René Mosse. Today, the estate is managed by their sons, Joseph and Sylvestre Mosse, who continue the family tradition of organic, low-intervention natural viticulture. Bisou (formerly named Le Gros) is a vibrant, chillable Vin de France red blend containing both red and white grapes, crafted for pure freshness and immediate drinkability.

## Interesting facts

- Originally named 'Le Gros', the wine was renamed 'Bisou', which means 'Kiss' in French.
- Although bottled as a light red wine, the blend uniquely incorporates white and grey grapes like Chenin Blanc and Grolleau Gris.
- Founders Agnès and René Mosse ran a natural wine bar in Tours before learning winemaking in Amboise.

## Food pairing

With its light body, brisk acidity, and minimal tannins, this red blend acts much like a full-bodied rosé or fresh chillable red. It thrives alongside high-fat, tangy, or cured foods like charcuterie, duck, and pork. The wine's vibrant acidity effortlessly cuts through fats and cleanses the palate without clashing with light proteins or tart condiments like pickles and mustard.

## Wine making process

The grapes are grown on 30 to 35-year-old vines rooted in clay and gravel over schist, certified organic with biodynamic practices. Harvested entirely by hand in small crates, each variety undergoes separate vinification with 7 to 10 days of whole-bunch semi-carbonic maceration using native yeasts. The wine ages in neutral oak barrels and large foudres before blending and bottling unfined and unfiltered with minimal sulfur added.
