## About this wine

Nicola Gatta is a biodynamic producer based in Gussago, in the eastern hills of Lombardy. Operating outside the strict rules of the Franciacorta DOCG to maintain his creative freedom, Gatta crafts exceptional traditional-method sparkling wines. His vineyards sit on limestone-rich soils at relatively high altitudes, which impart a distinct mineral tension to his wines. He measures aging not by years, but by 'lune' (moons)—with this Blanc de Blancs undergoing 50 moons of lees aging.

## Interesting facts

- Nicola Gatta measures the aging of his sparkling wines by lunar cycles ('lune') rather than months.
- The estate is located in Gussago, a limestone-rich zone outside the official boundaries of the Franciacorta DOCG.
- Gatta completely rejects synthetic chemicals and added sulfites, relying entirely on biodynamic preparations.

## Food pairing

The high acidity and zero-dosage bone-dry profile of this Blanc de Blancs cut beautifully through rich, fatty, or fried foods, while its intense minerality and autolytic complexity harmonize perfectly with fresh seafood and aged, salty cheeses.

## Wine making process

Spontaneous fermentation using only indigenous yeasts. No clarification, no filtration, and zero added sulfur throughout the process. The wine undergoes secondary fermentation in the bottle according to the traditional method and is aged on its fine lees for 50 moons (lune). It is disgorged without any added dosage (Pas Dosé / Nature), preserving the purest expression of the Chardonnay grape and the limestone terroir.
