## About this wine

Paul Déthune is a highly respected grower Champagne house located in the prestigious Grand Cru village of Ambonnay in the Montagne de Reims. Managed by Pierre and Sophie Déthune, the estate spans just 7 hectares of Grand Cru vines. This Blanc de Noirs is crafted exclusively from Pinot Noir, showcasing the power, richness, and elegance characteristic of Ambonnay's terroir. The family has been making wine here since the 19th century, combining traditional methods with sustainable viticulture.

## Interesting facts

- The estate's cellars are carved directly into the region's historic chalk, maintaining a constant cool temperature year-round.
- Paul Déthune uses solar panels and rainwater harvesting, making it one of Champagne's highly eco-friendly estates.
- Ambonnay is widely regarded as the absolute pinnacle for Grand Cru Pinot Noir in the entire Champagne region.

## Food pairing

The high acidity and effervescence of this Blanc de Noirs cut through rich, fatty proteins like duck and pork belly, while the structural weight of 100% Pinot Noir stands up to earthy flavors like truffles and wild mushrooms.

## Wine making process

Hand-harvested Pinot Noir grapes undergo gentle pressing. Fermentation takes place in stainless steel tanks and oak tuns (foudres), which add complexity and texture. The wine undergoes malolactic fermentation and is aged on its lees in the estate's chalk cellars for at least 36 to 48 months before disgorgement. A low dosage is added to preserve the natural expression of the Grand Cru terroir.
