## About this wine

Old World Winery is a family-owned natural winery located in Fulton, Sonoma County, operated by fourth-generation winemaker Darek Trowbridge. Trowbridge honors winemaking traditions passed down from his grandfather, Lino Martinelli, which predate industrial additions and synthetic chemicals. The winery focuses on regenerative, organic, and biodynamic viticulture across century-old heritage vineyards. The Bloom cuvée represents Old World Winery's interpretation of a light, chillable red wine, incorporating rare century-old plantings such as Abouriou alongside Pinot Noir and Pinotage.

## Interesting facts

- Fermented using traditional 100% whole-cluster foot-stomping in open vessels.
- Includes rare century-old Abouriou vines originally planted in Sonoma over a hundred years ago.
- Crafted using regenerative organic and dry-farming methods passed down through four generations.

## Food pairing

This light, chillable red wine features electric acidity, soft tannins, and vibrant fresh red fruit. Its low tannin structure allows it to pair exceptionally well with fish like salmon without creating a metallic taste, while its bright acidity cuts through the richness of duck, pork charcuterie, and butter sauces.

## Wine making process

The grapes were hand-harvested from century-old heritage estate vineyards in the Russian River Valley. Vinification was executed using 100% whole-cluster foot-stomped fermentation in open-top fermenters with native yeasts and zero temperature control or chemical additives. The wine was aged in neutral oak barrels sur lie to preserve freshness and textural purity, before being bottled unfined and unfiltered with only a minimal trace of sulfur dioxide added at bottling.
