## About this wine

Bodegas Félix Callejo was founded in 1989 in Sotillo de la Ribera by Félix Callejo and his wife Pilar. Today, the family estate is run by the second generation—siblings José Félix, Noelia, Beatriz, and Cristina Callejo—with winemaking expertise developed at renowned global estates such as Château Pétrus and Araujo Estate. Situated at high altitudes between 830 and 930 meters in the northern limits of the Duero River Valley, the vineyards benefit from loamy-clay, limestone, and gravel soils. Flores de Callejo is the estate's vibrant, youthful expression of high-altitude Tinto Fino, crafted to capture raw fruit purity and regional authenticity.

## Interesting facts

- Winemakers Noelia and José Félix Callejo trained at top world estates including Château Pétrus and Araujo Estate.
- Vineyards sit at extreme high altitudes reaching up to 930 meters above sea level in Sotillo de la Ribera.
- Grapes are harvested by hand in small 12 kg boxes and double-sorted to ensure optimum berry purity.

## Food pairing

The wine's bright acidity and smooth, integrated tannins slice through moderate fats and savory protein structures without overpowering the palate. Its vibrant fresh berry fruit and subtle oak spice complement cured meats, roasted poultry, semi-cured cheeses, and herb-infused dishes.

## Wine making process

Grapes are hand-harvested in small 12 kg boxes from certified organic estate vineyards. Upon entering the winery at cool temperatures during harvest, clusters undergo double-table sorting before gentle destemming without crushing. A cold pre-fermentation maceration precedes spontaneous alcoholic fermentation with indigenous yeasts at controlled low temperatures. Following a 5-day post-fermentation skin maceration, the wine matures for 6 months in French oak barrels and 500-liter casks alongside stainless steel vessels before bottling.
