## About this wine

Domaine Matin Calme was founded in 2006 by Anthony Guix in the Roussillon region of Southern France. The estate encompasses old vine plots situated at high elevations between 300 and 500 meters in Bélesta. Operating under certified organic and biodynamic principles, the winery prioritizes minimal human intervention to allow the granite and schist terroirs to speak clearly through the wine.

## Interesting facts

- Bonica Marieta translates to Pretty Ladybug in Catalan, honoring beneficial insects in organic viticulture.
- Sourced from old vines ranging from 50 to over 100 years old grown on granite and schist soils at 1,500 feet elevation.
- Sustained by manual farming techniques including hand-tilling soils with pickaxes and using zero synthetic chemicals.

## Food pairing

The wine's bright acidity, light-to-medium body, and lower alcohol make it exceptionally food-friendly. It cuts through delicate fat in poultry and charcuterie while matching earthy mushroom flavors without overwhelming the palate.

## Wine making process

The grapes are manually harvested in small 10 kg crates from old vines ranging between 50 and 100+ years of age. Vinification involves whole-cluster semi-carbonic maceration with spontaneous fermentation driven by indigenous yeasts in stainless steel and neutral vats. The process relies on gravity flow without pumping. The wine is aged in neutral vessels and bottled unfined, unfiltered, and with no added sulfites.
