## About this wine

The Bosio Passato Barbera d'Alba is a 100% Barbera wine from the Alba sub-region of Piedmont, Italy. Produced by Bosio Family Estates, a winery with roots dating back to 1967, it embodies a commitment to family heritage and quality winemaking. The 'Passato' designation hints at a specific aging process, and the wine's limited production of 6,666 bottles underscores its exclusive nature. The producer's 'glocal' approach aims to share their Piedmontese legacy on a global scale.

## Interesting facts

- Limited to only 6,666 bottles.
- Boasts a high alcohol content of 15.5% ABV.
- Aged for six months in large Slavonian oak barrels.

## Food pairing

The wine's substantial body and moderate tannins are well-suited to rich, protein-heavy dishes. Its inherent acidity can cut through the richness of meats and cheeses, cleansing the palate. The wine's fruit-forward character can complement the sweetness in dishes like pork with apple chutney or duck with cherry reduction.

## Wine making process

The Bosio Passato Barbera d'Alba is produced from 100% Barbera grapes. The winemaking process involves traditional red wine fermentation with a 20-day period of controlled-temperature maceration in stainless steel tanks, utilizing selected yeasts. Following fermentation, the wine is aged for six months in 5000 L Slavonian oak barrels, with a subsequent short period of bottle aging before release. The grapes are cultivated in Canale at an altitude of 300 meters on clayey-calcareous soil.
