Bottega Gold Prosecco DOC Spumante Brut is a sparkling white wine from the Veneto region of Italy, produced by Bottega Spa exclusively from Glera grapes grown in the Treviso hills. The wine is distinguished by its iconic golden bottle, designed to preserve its aroma and freshness. Bottega Spa, with roots dating back to the 17th century, is known for its dedication to quality and imaginative presentation. The specific terroir of the Treviso hills, characterized by varied soils and a climate with significant day-night temperature fluctuations, contributes to the wine's unique profile. The 2019 vintage is noted for its dry character and vibrant fruit and herbal notes.

## Food pairing

The wine's lively acidity cuts through richer elements like those found in seafood or creamy risottos, while its delicate fruit notes complement lighter dishes. Its crispness makes it an excellent palate cleanser, preparing the taste buds for the next bite.

## Wine making process

Bottega Gold Prosecco is produced using the Italian Charmat method, also known as the Martinotti Method. Glera grapes are hand-harvested and softly pressed. The primary fermentation is followed by a secondary fermentation in stainless steel tanks, lasting approximately 40 days at a controlled temperature of 14-15°C with selected yeasts. This process is designed to create the wine's signature sparkle and preserve its fresh character. The wine remains in contact with the lees after fermentation to enhance its body, structure, and aroma. It is aged without oak.
