## About this wine

Domaine Camille Thiriet was created in 2016 by Burgundian native Camille Thiriet and Canadian winemaker Matt Chittick. Operating from Corgoloin, this micro-producer started in a tiny space behind Camille's family home before growing into a highly acclaimed boutique estate. Guided by informal mentorship from Bernard Noblet, retired chef de cave at Domaine de la Romanée-Conti, the estate focuses on low-yielding old vines and artisanal small-batch production.

## Interesting facts

- The cuvée incorporates grapes from centenarian vines in Meursault and 90-year-old vines in Pommard.
- A rare 3% skin maceration is applied to Pommard fruit to give subtle structural grip.
- Retired Domaine de la Romanée-Conti cellar master Bernard Noblet acts as informal mentor to the domaine.
- Every single bottle is hand-labeled and hand-waxed in small artisanal batches.

## Food pairing

High natural acidity and vibrant citrus cut through rich seafood, butter sauces, and soft goat cheeses, while subtle skin contact texture supports light poultry and roasted vegetables.

## Wine making process

Sourced from three old-vine parcels of Aligoté Doré in Pommard, Meursault, and Corgoloin, with vine age reaching 100 years. The grapes are hand-harvested and spontaneously fermented with indigenous yeasts. A small fraction (3%) undergoes short skin maceration prior to fermentation. The wine is aged in neutral French oak barrels for 10 to 12 months, followed by 1.5 months in stainless steel before bottling without fining or heavy filtration.
