## About this wine

Domaine Roux Père & Fils was established in 1885 in the village of Saint-Aubin, with family roots in the village spanning over three centuries. Today managed by fifth-generation winemakers, brothers Sébastien and Mathieu Roux, the estate encompasses around 70 hectares across Burgundy. 'Les Murelles' serves as the domaine's benchmark expression, bridging regional accessibility with the precision of Côte de Beaune terroir.

## Interesting facts

- Domaine Roux played a central role in earning global recognition for the Saint-Aubin appellation.
- The family's winemaking roots in Saint-Aubin stretch back over 300 years.
- The wine utilizes a precise 50/50 aging split between stainless steel tanks and French oak barrels.

## Food pairing

The medium-to-full body and bright acidity of Chardonnay paired with partial oak aging make it ideally suited for rich, buttery seafood and tender white meats with cream sauces. The wine's vibrant acidity cuts through fat while its subtle roasted oak and nutty notes complement baked vegetables and soft goat cheese.

## Wine making process

Grapes are hand-harvested and completely de-stemmed before pressing. Fermentation takes place in temperature-controlled stainless steel tanks to retain primary fruit character. Aging lasts six months, split evenly with 50% resting in stainless steel tanks and 50% in French oak barriques (10% new, 20% one-year-old, and 70% two-year-old).
