## About this wine

Maison Chanterêves was founded in 2010 in Savigny-lès-Beaune by husband-and-wife winemaking team Tomoko Kuriyama and Guillaume Bott. Combining Kuriyama's German winemaking rigor with Bott's deep Burgundian cellar experience, the micro-négociant has earned international acclaim for its precise, expressive wines. The 2024 vintage marks the maiden release of the Bourgogne Chardonnay 'Yume Utai' (translating to 'Dream Song'), replacing their generic Bourgogne Blanc label. Fruit is sourced from organic growers, with two-thirds coming from Maranges in the Côte de Beaune and one-third from Pierres Dorées in southern Beaujolais.

## Interesting facts

- Yume Utai translates from Japanese to Dream Song or Beautiful Dream.

## Food pairing

The wine's crisp acidity, medium weight, and chalky minerality call for delicate seafood, soft goat cheeses, and white poultry. Citrus-forward sauces and light butter or cream components beautifully mirror its freshness and fine texture.

## Wine making process

Grapes are crushed whole-cluster and subjected to a gentle 6-hour press cycle. Spontaneous fermentation occurs with indigenous yeasts using a pied de cuve. The wine is aged for 10 to 12 months in a combination of 228-liter and 600-liter used oak barrels, followed by 5 to 7 months of blending on fine lees in stainless steel tanks. It is bottled unfined with light filtration and minimal sulfur additions prior to bottling.
