## About this wine

Pierre-Vincent Girardin, representing the 13th generation of a historic Burgundian winemaking family, established his own domaine in Meursault in 2017. 'Éclat de Calcaire' (splendor of limestone) is his signature Bourgogne Blanc, sourced from vineyards with high limestone content. Pierre-Vincent's style is defined by extreme precision, tension, and a focus on terroir rather than oak influence, making him one of the most exciting young talents in Burgundy today.

## Interesting facts

- Pierre-Vincent Girardin was only 21 years old when he released his first vintage in 2017.
- He uses custom 500L and 600L barrels designed to reduce the surface-area-to-wine ratio, minimizing oak flavor.
- The name 'Éclat de Calcaire' translates to 'splendor of limestone,' highlighting the soil's influence on the wine.

## Food pairing

The high acidity and intense mineral core of this Chardonnay cut through rich, buttery sauces while complementing delicate seafood and poultry. The subtle oak integration pairs beautifully with roasted herbs and semi-hard cheeses without overpowering them.

## Wine making process

Hand-harvested grapes are gently pressed using a pneumatic press. Fermentation occurs with indigenous yeasts. The wine is aged in custom-made, larger 500-liter French oak barrels (demi-muids) to minimize wood influence and preserve the mineral tension and purity of the fruit. Minimal fining and filtration are applied before bottling.
