## About this wine

SAS Les Horées was founded in 2019 by German-born winemaker Catharina Sadde and her husband Guilhem Sadde. Catharina brought an extraordinary background to the estate, having worked as a Michelin-starred chef before gaining winemaking experience at premier Burgundian estates including Domaine de la Romanée-Conti, Comte Armand, Domaine Comte Georges de Vogüé, and Marquis d'Angerville. The name 'Les Horées' originates from ancient Greek mythology, referring to goddesses of the seasons.

## Interesting facts

- Winemaker Catharina Sadde trained as a Michelin-starred chef before gaining oenology experience at DRC.
- The domain name originates from the Horae, ancient Greek deities celebrating the natural harmony of seasons.
- Vineyards are worked using horses and minimal tillage to foster natural soil biodiversity.

## Food pairing

The bright acidity and silky, fine-grained tannins of this Pinot Noir effortlessly slice through the richness of roasted game and poultry, while its subtle stem spice and red fruit character seamlessly complement earthy mushroom and savory herb preparation.

## Wine making process

Grapes are harvested by hand and subjected to strict selection. Vinification features 50% to 80% whole-cluster inclusion with hand-selected stems, fermenting in open-top wooden tanks with ambient yeasts. Elevage takes place over approximately 12 months in neutral 350-liter French oak barrels. The wine is bottled unfined and unfiltered with minimal homeopathic sulfur additions at bottling.
