## About this wine

Domaine Chanterêves was established in Savigny-lès-Beaune by Japanese oenologist Tomoko Kuriyama and her husband Guillaume Bott. Initially founded as a boutique négociant, the estate quickly evolved with key vineyard acquisitions in high-altitude Burgundian appellations. The Mainbey lieu-dit sits at an altitude of 470 meters on stony, limestone-dominated soils in the Hautes-Côtes de Beaune, producing white wines defined by intense mineral drive and crisp acidity.

## Interesting facts

- The Mainbey vineyard sits at 470 meters elevation on stony limestone soils above the Côte de Beaune.
- This special cuvée aged for 22 months in oak barrels, double the duration of the standard bottling.
- Co-founder Tomoko Kuriyama completed her formal winemaking education at Geisenheim in Germany.

## Food pairing

The energetic, high-altitude acidity of this Chardonnay cuts cleanly through rich cream and butter sauces, while the textured weight gained from extended lees aging complements refined poultry, delicate seafood, and aged goat cheeses perfectly.

## Wine making process

Hand-harvested whole clusters of Chardonnay undergo a gentle six-hour pressing followed by spontaneous fermentation using indigenous yeasts and spontaneous malolactic fermentation. A portion of the 2023 harvest was reserved for an extended élevage prolongé, spending approximately 22 months maturing in 228-liter and 600-liter French oak barrels compared to the standard 10-12 months. The wine is settled on fine lees in stainless steel tanks prior to bottling unfined with minimal added sulfur.
