## About this wine

Domaine Denis Fouquerand et Fils is a historical estate located in La Rochepot at the southern end of Burgundy's Côte de Beaune. Traceable back to 1629 when the family was emancipated by local lord Marquis de Fargis, the modern domaine was developed by Denis Fouquerand in 1970. Today managed by his son Laurent Fouquerand, the 17-hectare estate transitioned to certified organic farming in 2013. The 'Derrière Montbard' vineyard sits on high-elevation hillside slopes composed of limestone scree near the medieval Château de La Rochepot.

## Interesting facts

- The Fouquerand family history in La Rochepot dates back to 1629, when they were emancipated by the local Marquis de Fargis.
- The estate has been certified organic since 2013, using mechanical soil cultivation, copper, and sulfur.
- Vineyards sit on steep slopes at 300 to 400 meters elevation near the historic medieval Château de La Rochepot.

## Food pairing

The vibrant acidity and fine-grained tannins of high-altitude Burgundy Pinot Noir cut cleanly through duck, poultry, and tender veal, while harmonizing seamlessly with traditional cream sauces and washed-rind Burgundy cheeses.

## Wine making process

Grapes are harvested entirely by hand in small perforated crates to preserve fruit integrity before cellar arrival. The fruit is 100% destemmed and subjected to temperature-controlled maceration in vats for approximately 15 days. Following fermentation and devatting, the wine is matured for 12 months in French oak barrels at the estate prior to bottling.
