## About this wine

Bramito della Sala Chardonnay is an Italian white wine from Umbria, produced by Marchesi Antinori. It is considered a companion to the estate's more famous Cervaro della Sala. The vineyards are located around the medieval Castello della Sala, on soils rich in fossil deposits and clay, at altitudes between 220 and 470 meters. The Antinori family has a winemaking legacy of over six centuries, with Castello della Sala being a key estate for their white wine production.

## Food pairing

The wine's bright acidity cuts through the richness of creamy sauces and fattier proteins, while its minerality complements seafood and earthy flavors. The medium body provides a good balance for a range of dishes.

## Wine making process

The winemaking process for Bramito della Sala Chardonnay begins with destemming and gentle crushing of the grapes. A short maceration of the must and skins occurs at low temperatures to enhance flavor extraction. Following clarification, different wine lots are fermented separately, with some in oak and others in stainless steel at controlled temperatures. Malolactic fermentation is carried out only in the oak-fermented lots. The wine is then blended and bottled.
