## About this wine

Hues That Breeze White Unfiltered is a collaborative natural wine project created by Marquis Williams of NYC-based hospitality brand Highly Recommended in partnership with Domaine Achille in Alsace, France. The wine brings together a traditional multi-varietal Alsatian blend to craft an approachable, vibrant white wine that showcases regional terroir through a modern, low-intervention lens.

## Interesting facts

- Crafted as a collaboration between NYC hospitality group Highly Recommended and Alsatian producer Domaine Achille.
- Features a traditional 5-grape Alsatian blend including Pinot Gris, Riesling, Pinot Blanc, Gewürztraminer, and Sylvaner.
- Bottled completely unfined and unfiltered to retain its raw natural purity and textured lees profile.

## Food pairing

The high acidity and exotic aromatic lift from Gewürztraminer and Riesling slice through rich, creamy soft cheeses and complement fragrant Asian spices. The gentle lees weight supports delicate poultry and fresh seafood without overpowering them.

## Wine making process

Organically cultivated grapes are harvested by hand in eastern France. Fermentation occurs spontaneously using indigenous yeasts in a low-intervention process. Aged on its fine lees to develop supple texture and body while maintaining lively fresh fruit character, the wine is bottled unfined and unfiltered with minimal added sulfur dioxide.
