## About this wine

Tenuta Vitivinicola Cavallotto is situated in Castiglione Falletto within the Barolo DOCG region of Piedmont, Italy. The Cavallotto family acquired the estate from Giuseppe Boschis in 1928, and in 1948 Olivio Cavallotto bottled their first estate-labeled Barolo. Today, fourth-generation siblings Laura, Giuseppe, and Alfio Cavallotto manage the estate, maintaining sole ownership over nearly the entire Bricco Boschis hill, a warm south-facing slope known for producing distinctively structured Nebbiolo.

## Interesting facts

- The Cavallotto family effectively owns the entire Bricco Boschis hill, making it a rare quasi-monopole in Barolo.
- Aged for 3 full years in massive Slavonian oak botti holding up to 10,000 liters.
- The 2021 vintage yielded 20 percent less production than average due to cool spring weather.

## Food pairing

The high tannic structure and vibrant acidity of Barolo demand rich proteins and fats to soften the tannins, while earthy components match the complex aromatic profile.

## Wine making process

Crafted from 100% organic Nebbiolo grapes harvested by hand in mid-October. The winemaking follows traditional methods with 100% destemming and fermentation using indigenous yeasts in horizontal tanks. Maceration is conducted using the traditional submerged-cap technique for 30 to 35 days. Malolactic fermentation occurs in cement tanks during the following spring. The wine is aged for 36 months in large traditional Slavonian oak casks ranging from 20 to 100 hectoliters before bottling.
