## About this wine

Brij Wines is a micro-négociant label created by renowned sommelier, author, and winemaker Rajat Parr alongside his estate project at Phelan Farm in Cambria, California. The winery is named in honor of Rajat Parr's father, Brij. While Phelan Farm focuses on estate-grown cool-climate grape varieties, Brij Wines works in partnership with conscientious local organic farmers across California's Central Coast. The brand emphasizes minimal-intervention winemaking and transparent coastal viticulture, showcasing cool-climate sites moderated by Pacific ocean fog and winds.

## Interesting facts

- Founded by acclaimed sommelier and natural wine pioneer Rajat Parr.
- The label 'Brij' is named in loving memory of founder Rajat Parr's father.
- Sourced from cool-climate organic vineyards in California's SLO Coast AVA.
- Bottled unfined and unfiltered with minimal total sulfites (~20 mg/L).

## Food pairing

The high, linear acidity and bright citrus salinity of this cool-climate Chardonnay cut cleanly through richer fats, cream, and oil. It thrives alongside fresh shellfish and delicate raw fish, while its medium body provides sufficient texture to support pan-seared poultry, rich butter sauces, and creamy goat cheeses without overwhelming delicate flavors.

## Wine making process

Sourced organically from Marfarm Vineyard in the Edna Valley within the San Luis Obispo Coast AVA. Fruit is whole-cluster and direct pressed upon arrival at the winery. Fermentation occurs naturally using wild, indigenous yeasts in temperature-controlled stainless steel tanks as well as large, neutral Stockinger oak foudres. The wine undergoes aging for 9 to 14 months in neutral French oak barriques and neutral foudres. It is bottled by hand without fining or filtration, with minimal sulfur additions prior to bottling.
